Pollen Cider 2014

Pollen 2014 is made from the fruit of a single, 400-year-old Herefordshire apple farm. Based on the classic bitter-sweet Dabinett cider apple and including various other varieties from Brown’s to the little known ‘Dous-moyene’. All were farmed without the routine use of chemical pesticides, herbicides, or fertilizers and much of the fruit is from an untouched field blend of old, standard trees.

Our original and in some ways our most ambitious sparkling cider. Pollen 2014 is bone-dry with refreshing acidity and a bold flavour of both green and ripe, burnished apple, rounded out with a richness from nearly 6 years ageing on the lees in bottle. Made in the ‘traditional method’, this cider has had a second fermentation in the bottle as per Champagne but is sold with the sediment that allows it to continue developing in flavour as it ages further.
